RMI would like to wish our Haitian partners and staff a Happy Independence Day! January 1, 1804 was the day Haiti declared its independence from France - the first free black republic. They celebrate by drinking (not eating - the Creole word that is used for eating soup actually means that you drink soup) pumpkin soup. The soup is a hearty beef and vegetable stew with a pureed butternut type of squash they call a pumpkin base - very yummy! The holiday is actually 2 days, January 1 and 2. We're excited to be celebrating with you!!
